Ingredients

2 cups canned whole tomatoes (with juice)

1 cup vegetable broth

1 small onion, diced

2 cloves garlic, minced

1 teaspoon olive oil

1 teaspoon dried basil

½ teaspoon sugar (optional, to balance acidity)

Salt and pepper to taste

Fresh basil leaves, for garnish (optional)

A splash of heavy cream or coconut milk (optional for creaminess)

Instructions

Sauté the Aromatics: In a medium saucepan, add the olive oil and heat over medium heat. Add the diced onion and sauté for about 3 minutes until soft. Add the minced garlic and sauté for another minute until fragrant.

Add Tomatoes: Pour in the canned tomatoes with their juice. Use a wooden spoon to break them up a bit.

Incorporate the Flavors: Stir in the vegetable broth, dried basil, and sugar (if using). Season with salt and pepper to taste.

Simmer: Bring the mixture to a gentle simmer, then reduce the heat to low. Allow it to cook for about 5-7 minutes, stirring occasionally.

Blend It Up: Using an immersion blender, purée the soup until it’s smooth. If you prefer a chunkier texture, blend only half of the soup. (Alternatively, carefully transfer the soup to a countertop blender in batches).

Finish It Off: If desired, stir in a splash of heavy cream or coconut milk for added creaminess. Taste and adjust seasoning if necessary.

Serve: Ladle the soup into bowls, garnish with fresh basil leaves, and enjoy hot!
