2 cups cooked chicken, shredded (rotisserie chicken works well)

1 cup BBQ sauce (your favorite brand)

1 ½ cups shredded cheddar cheese

1 cup shredded mozzarella cheese

4 large flour tortillas

¼ cup red onion, thinly sliced

½ cup corn (canned or frozen)

2 tablespoons olive oil

Fresh cilantro, for garnish (optional)

Sour cream or Greek yogurt, for serving

Instructions
 

Prep the Chicken: In a medium bowl, mix the shredded chicken with the BBQ sauce until well-coated. Adjust the amount of sauce to your taste preference.

    Heat the Pan: In a large skillet, heat 1 tablespoon of olive oil over medium heat.

      Assemble the Quesadillas:

        - Place one tortilla in the skillet and top it with a generous amount of BBQ chicken, followed by a sprinkle of red onion, corn, and both cheeses.

          - Top with a second tortilla.

            Cook the Quesadilla: Press down gently with a spatula, and cook for about 3-4 minutes or until the bottom tortilla is golden brown. Flip carefully and cook for an additional 3-4 minutes until the second side is also golden and the cheese has melted.

              Repeat: Remove the cooked quesadilla from the skillet and keep warm. Add the remaining olive oil to the skillet, and repeat the assembly and cooking for the last two quesadillas.

                Slice and Serve: Once all quesadillas are cooked, slice them into wedges. Garnish with fresh cilantro if desired and serve with sour cream or Greek yogurt for dipping.
