2 cups vegetable broth (or water)

1 cup mixed vegetables (frozen or fresh, e.g., bell peppers, peas, corn, carrots)

1 cup broccoli florets (fresh or frozen)

1 cup shredded cheese (cheddar, mozzarella, or a blend)

1/2 cup half-and-half or cream (optional for extra creaminess)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried Italian herbs (or dried thyme)

Salt and pepper to taste

Fresh parsley for garnish (optional)

Preheat Oven: Preheat your oven to 375°F (190°C). Grease a medium-sized casserole dish with cooking spray or olive oil.

    Cook the Rice: In a medium saucepan, bring the vegetable broth (or water) to a boil. Add the uncooked rice, stir, reduce the heat to low, cover with a lid, and let simmer for about 15 minutes or until the rice is tender and liquid is absorbed.

      Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the mixed vegetables and broccoli florets and sauté for about 5 minutes, until they are crisp-tender.

        Combine Ingredients: In a large mixing bowl, combine the cooked rice, sautéed vegetables, garlic powder, onion powder, dried Italian herbs, half-and-half (if using), and half of the shredded cheese. Season with salt and pepper to taste. Mix until well-combined.
