Ingredients

1 pound fresh green beans, trimmed

2 cups water

1 cup white vinegar

2 tablespoons salt

1 tablespoon sugar

2 cloves garlic, smashed

1 tablespoon mustard seeds

1 tablespoon dill seeds or 1/4 cup fresh dill sprigs

Optional: red pepper flakes for a bit of heat

Instructions

Prepare the Green Beans: Wash and trim the ends of the green beans. Aim for beans that are about the same length for even pickling.

Boil the Brine: In a medium saucepan, combine water, white vinegar, salt, and sugar. Bring the mixture to a boil over medium-high heat, stirring until the salt and sugar are completely dissolved.

Add Flavor: Once boiling, add the smashed garlic, mustard seeds, dill seeds (or fresh dill), and red pepper flakes if using. Let the mixture simmer for about 1 minute to infuse the flavors.

Pack the Jars: Place the trimmed green beans upright in clean glass jars. You can layer them with the garlic and dill for enhanced flavor distribution.

Pour the Hot Brine: Carefully pour the hot brine over the green beans in the jars, ensuring they are completely submerged. Leave a little space at the top of the jar.

Seal and Cool: Seal the jars immediately with lids and let them cool to room temperature. For the best flavor, refrigerate for at least 2 hours before serving, but they will be ready to enjoy after just 5 minutes of cooling!

Serve and Enjoy: These dilly beans make a fantastic snack, a crunchy side dish, or a unique addition to any charcuterie board. Enjoy cold or at room temperature!
