Ingredients

1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 cup water

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

1 cup buffalo sauce (store-bought or homemade)

1 tablespoon olive oil

Optional: Fresh parsley or cilantro for garnish

Optional: Ranch or blue cheese dressing for dipping

Instructions

Prepare the Cauliflower: Wash and cut the cauliflower into bite-sized florets. Pat them dry with a kitchen towel to remove excess moisture.

Make the Batter: In a large mixing bowl, combine the flour, water, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper. Whisk until smooth; the batter should be thick enough to coat the cauliflower.

Coat the Cauliflower: Dip each cauliflower floret into the batter, allowing any excess to drip off. Place them on a plate or tray lined with parchment paper.

Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

Air Fry the Cauliflower: Lightly spray the air fryer basket with cooking oil to prevent sticking. Arrange the battered cauliflower florets in a single layer, ensuring they are not overcrowded. You may need to do this in batches. Air fry for 12-15 minutes, shaking the basket halfway through, until they are golden brown and crispy.

Buffalo Sauce Coating: In a bowl, mix the cooked cauliflower with the buffalo sauce and olive oil. Toss gently to ensure all florets are well-coated.

Final Cook: Return the coated cauliflower to the air fryer basket and air fry for an additional 5-7 minutes at 400°F (200°C) until the sauce is set and slightly caramelized.

Serve: Transfer the buffalo cauliflower to a serving platter. Garnish with chopped parsley or cilantro if desired, and serve warm with your choice of ranch or blue cheese dressing for dipping.
