Apple Cinnamon Oatmeal Bake

2 cups rolled oats

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon salt

2 cups milk (dairy or plant-based)

1/4 cup maple syrup (or honey)

1 large egg

2 tablespoons melted coconut oil or butter

2 apples, peeled, cored, and chopped (preferably Granny Smith or Honeycrisp)

1/2 cup chopped walnuts or pecans (optional)

1/4 cup raisins (optional)

1 teaspoon vanilla extract

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease a 9x9-inch or 11x7-inch baking dish lightly with cooking spray or a little bit of butter.

    Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, ground cinnamon, and salt. Mix well to ensure all the dry ingredients are evenly distributed.

      Mix Wet Ingredients: In another bowl, whisk together the milk, maple syrup (or honey), egg, melted coconut oil (or butter), and vanilla extract until smooth.

        Combine Mixtures: Pour the wet ingredients into the bowl with the dry ingredients and stir until just combined. Fold in the chopped apples, nuts, and raisins (if using) until evenly distributed.

          Bake: Transfer the oatmeal mixture into the prepared baking dish, spreading it evenly. Bake in the preheated oven for 30-35 minutes, or until the top is golden and the oatmeal is set (a toothpick inserted in the center should come out clean).

            Cool and Serve: Once baked, allow the oatmeal bake to cool for about 10 minutes in the baking dish before slicing into squares. Serve warm, optionally with a drizzle of additional maple syrup or a dollop of yogurt on top.
