Ingredients

2 cups rolled oats

1 cup unsweetened applesauce

1 large apple, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)

1/2 cup milk of choice (dairy or non-dairy)

1/4 cup maple syrup (or honey)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup raisins or chopped nuts (optional)

Cooking spray or muffin liners

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). If using muffin tins, either grease them with cooking spray or line with muffin liners.

Combine Wet Ingredients: In a large mixing bowl, combine the applesauce, milk, maple syrup, and vanilla extract. Stir until well combined.

Mix Dry Ingredients: In a separate bowl, mix together the rolled oats, ground cinnamon, baking powder, and salt.

Combine Mixtures: Gradually add the dry oat mixture to the wet ingredients, stirring gently to combine. Fold in the diced apple and optional raisins or nuts.

Portion into Muffin Tins: Evenly distribute the oatmeal mixture into the prepared muffin tins, filling each cup to about three-quarters full.

Bake: Place the muffin tin in the preheated oven and bake for 25-30 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.

Cool and Serve: Allow the breakfast cups to cool in the pan for about 5 minutes before carefully transferring them to a wire rack to cool completely. Serve warm or at room temperature. Enjoy!
