Apple Oat Muffins with Crunchy Topping

For the Muffins:

1 cup rolled oats

1 cup all-purpose flour (or whole wheat flour for a healthy twist)

1/2 cup brown sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup unsweetened applesauce

2 large eggs

1/3 cup vegetable oil (or melted coconut oil)

1 teaspoon vanilla extract

1 large apple (preferably Granny Smith), peeled and diced

For the Crunchy Topping:

1/4 cup rolled oats

1/4 cup brown sugar

2 tablespoons all-purpose flour (or whole wheat flour)

1 teaspoon cinnamon

2 tablespoons cold unsalted butter, cut into small pieces

1/4 cup chopped nuts (walnuts or pecans, optional)

Instructions
 

Preheat the Oven:

    Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly with cooking spray.

      Prepare the Dry Ingredients:

        In a large mixing bowl, combine the rolled oats, flour, brown sugar, baking powder, baking soda, cinnamon, and salt. Whisk together until well blended.

          Mix the Wet Ingredients:

            In a separate bowl, whisk together the applesauce, eggs, vegetable oil, and vanilla extract until smooth.

              Combine Wet and Dry Ingredients:

                Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the diced apple, being careful not to overmix.

                  Prepare the Crunchy Topping:

                    In a small bowl, mix together rolled oats, brown sugar, flour, and cinnamon. Add in the cold butter pieces and use your fingers or a fork to crumble the mixture until it resembles coarse crumbs. If desired, stir in the chopped nuts now.

                      Fill the Muffin Tin:

                        Scoop the muffin batter into the prepared muffin tin, filling each cup about 2/3 full. Sprinkle the crunchy topping generously over each muffin.

                          Bake the Muffins:

                            Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean and the tops are golden brown.
