Ingredients

1 cup rolled oats

1 ½ cups plain Greek yogurt (or dairy-free alternative)

1 large apple, diced (preferably a tart variety like Granny Smith)

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon ground cinnamon

½ teaspoon vanilla extract

¼ cup chopped nuts (walnuts or almonds)

¼ cup raisins or dried cranberries (optional)

Pinch of salt

Instructions

Prepare the Oats: In a medium bowl, combine the rolled oats with a pinch of salt and 1 tablespoon of ground cinnamon. Stir well to blend the flavors.

Mix the Yogurt Base: In a separate bowl, mix the Greek yogurt with vanilla extract and honey (or maple syrup) until smooth. Adjust the sweetness according to your preference.

Add the Apples: Fold the diced apples into the yogurt mixture, ensuring they are evenly coated. You can reserve a few apple pieces for garnish, if desired.

Layer the Cups: In serving cups or bowls, create layers starting with a spoonful of the yogurt-apple mixture at the bottom. Add a layer of the oat mixture, followed by another layer of the yogurt. Repeat the layers until the cups are filled, ending with yogurt on top.

Top it Off: Sprinkle the chopped nuts and raisins or cranberries (if using) on top of the final yogurt layer. You can also drizzle a little extra honey or maple syrup for sweetness.

Chill and Serve: Place the assembled yogurt cups in the refrigerator for at least 30 minutes to allow the flavors to meld and the oats to soften. Serve cold as a refreshing breakfast or snack!
