Avocado Deviled Eggs

6 large eggs

1 ripe avocado

2 tablespoons mayonnaise

1 teaspoon Dijon mustard

1 teaspoon lime juice

1/4 teaspoon garlic powder

Salt and black pepper to taste

1/4 teaspoon smoked paprika (plus extra for garnish)

Fresh cilantro leaves for garnish

Boil the Eggs: In a medium saucepan, place the eggs and cover them with cold water. Bring the water to a rolling boil over medium-high heat. Once boiling, cover the pan, remove it from heat, and let it sit for 10-12 minutes.

    Cool the Eggs: After the time is up, transfer the eggs to a bowl of ice water to cool for about 5 minutes. This not only stops the cooking process but also makes them easier to peel.

      Peel the Eggs: Gently tap the cooled eggs on a hard surface and peel off the shells. Rinse the eggs under cold water to remove any bits of shell, then pat them dry with a paper towel.

        Prepare the Filling: Slice the peeled eggs in half lengthwise and carefully remove the yolks, placing them in a mixing bowl. Add the ripe avocado, mayonnaise, Dijon mustard, lime juice, garlic powder, salt, black pepper, and smoked paprika to the bowl.

          Mix Together: Using a fork or a hand mixer, mash the yolks and avocado together until smooth and creamy. Taste and adjust seasoning if needed.

            Fill the Eggs: Spoon or pipe the creamy avocado mixture back into the egg whites. Ensure a generous amount fills each half.
