2 cups rotini pasta

1 ripe avocado, diced

1 cup cherry tomatoes, halved

1 cup corn kernels (fresh, canned, or frozen)

1/2 cup red bell pepper, diced

1/2 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

1/2 cup ranch dressing (store-bought or homemade)

1 tablespoon lime juice

Salt and pepper to taste

Optional: 1/2 cup shredded cheese (cheddar or feta) for topping

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
