Ingredients

1 cup chocolate chip cookie dough (store-bought or homemade)

4 large flour tortillas

1/2 cup mini marshmallows

1/2 cup crushed graham crackers

1/2 cup peanut butter (or almond butter for allergy-friendly version)

1/4 cup honey (optional, for extra sweetness)

1/4 cup powdered sugar (for dusting, optional)

Cooking spray or butter for grilling

Instructions

Prepare the Dough: If using store-bought cookie dough, scoop out about 2 tablespoons per quesadilla and roll into small balls. If making homemade cookie dough, follow your recipe and chill it until firm for easier handling.

Spread the Everything: Take a flour tortilla and lay it flat on a clean surface. Spread a thin layer of peanut butter across one side of the tortilla.

Layer Ingredients: Place two to three cookie dough balls onto half of the tortilla. Add a handful of mini marshmallows and some crushed graham crackers on top of the cookie dough.

Fold the Quesadilla: Carefully fold the tortilla in half over the filling, pressing down gently to seal the edges.

Cook the Magic: Heat a skillet over medium heat and lightly grease it with cooking spray or a small amount of butter. Place the quesadilla in the skillet and cook for about 3-4 minutes until the bottom is golden brown and slightly crispy.

Flip & Finish: Gently flip the quesadilla with a spatula and cook for an additional 3-4 minutes on the other side, ensuring the cookie dough inside melts and the marshmallows start to ooze.

Sweeten the Deal: Once done, transfer the quesadilla to a plate. If desired, drizzle with honey and dust with powdered sugar.

Slice & Serve: Let the quesadilla cool for a minute, then slice it into wedges. Serve warm with a side of fresh fruit or a glass of milk for a delightful after-school snack!
