Bacon & Potato Breakfast Casserole

8 slices of thick-cut bacon, chopped

1 large onion, diced

2 cloves garlic, minced

4 cups frozen hash brown potatoes (or freshly grated)

1 ½ cups shredded cheddar cheese

½ cup milk

6 large eggs

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon smoked paprika (optional)

2 green onions, sliced (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with cooking spray or butter.

    Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy. Use a slotted spoon to transfer the bacon to a paper towel-lined plate; set aside. Leave about 1 tablespoon of grease in the skillet.

      Sauté the Onion and Garlic: In the same skillet with the bacon grease, add the diced onion and sauté for about 4-5 minutes, until translucent. Add the minced garlic and cook for another minute, stirring frequently to avoid burning.

        Combine Ingredients: In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, and smoked paprika. Stir in the cooked bacon, sautéed onion and garlic, and hash brown potatoes until well combined. Set aside ½ cup of the cheddar cheese for topping.

          Layer in the Baking Dish: Pour the mixture into the prepared baking dish and spread it out evenly. Sprinkle the reserved cheddar cheese on top.

            Bake the Casserole: Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the casserole is set in the middle and the top is golden brown.

              Let Cool and Serve: Remove the casserole from the oven and allow it to cool for about 5 minutes. Top with sliced green onions before serving.
