Baked Apple Cinnamon Oatmeal Cups

2 cups rolled oats

1 teaspoon baking powder

1 teaspoon ground cinnamon

½ teaspoon salt

1 cup milk (dairy or non-dairy)

2 large eggs

½ cup unsweetened applesauce

¼ cup maple syrup or honey

2 medium apples, peeled, cored, and diced (about 2 cups)

¼ cup chopped walnuts or pecans (optional)

½ teaspoon vanilla extract

Extra cinnamon for sprinkling on top

Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin with non-stick spray or line with paper liners.

    In a large mixing bowl, combine the rolled oats, baking powder, ground cinnamon, and salt. Stir well to mix.

      In another bowl, whisk together the milk, eggs, applesauce, maple syrup (or honey), and vanilla extract until fully combined.

        Pour the wet mixture into the dry mixture, and stir until everything is well combined.

          Gently fold in the diced apples and chopped nuts (if using) until evenly distributed.

            Scoop the oatmeal mixture into the prepared muffin tin, filling each cup to about ¾ full. Sprinkle a little extra cinnamon on top of each cup for added flavor.

              Bake in the preheated oven for about 25-30 minutes or until the edges are golden brown and a toothpick inserted in the center comes out clean.

                Remove from the oven and let cool in the pan for about 5 minutes before transferring to a wire rack to cool completely. Enjoy warm or store in an airtight container!
