Ingredients

1 lb chicken tenders

1/4 cup lime juice (freshly squeezed)

2 tablespoons olive oil

2 tablespoons honey

1 tablespoon chili powder

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust for spice level)

1 teaspoon salt

1/2 teaspoon black pepper

1 cup breadcrumbs (preferably panko for extra crunch)

Fresh cilantro, chopped (for garnish)

Instructions

Preheat Oven: Start by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare Marinade: In a large mixing bowl, combine lime juice, olive oil, honey, chili powder, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Whisk until well combined to create a flavorful marinade.

Marinate Chicken: Add the chicken tenders to the bowl with the marinade, ensuring each piece is fully coated. Cover the bowl with plastic wrap or transfer the chicken and marinade to a ziplock bag. Let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

Coat Chicken: Once marinated, remove the chicken tenders from the marinade and allow the excess to drip off. Place the breadcrumbs in a shallow dish. Dredge each tender in the breadcrumbs, pressing down lightly to ensure the coating sticks.

Arrange on Baking Sheet: Lay the breaded chicken tenders flat on the prepared baking sheet, making sure they are not touching to allow for even cooking.

Bake: Bake in the preheated oven for 20-25 minutes or until the chicken tenders are cooked through (internal temperature should reach 165°F / 74°C) and the coating is golden brown.

Serve: Remove from the oven and let them cool for a couple of minutes. Garnish with fresh cilantro before serving. These zesty chicken tenders are great served with a side of lime wedges and your favorite dipping sauce!
