Baked Feta Potatoes

4 medium-sized Yukon Gold potatoes

200g feta cheese, crumbled

2 tablespoons olive oil

2 garlic cloves, minced

1 teaspoon dried oregano

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

1 cup cherry tomatoes, halved

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Potatoes: Wash and scrub the Yukon Gold potatoes thoroughly. Pat them dry, then poke several holes in each potato with a fork to allow steam to escape while baking.

      Bake the Potatoes: Place the potatoes directly on the oven rack or on a baking sheet lined with parchment paper. Bake for about 45-60 minutes, or until the potatoes are tender when pierced with a fork.

        Make the Feta Mixture: In a mixing bowl, combine crumbled feta cheese, olive oil, minced garlic, dried oregano, paprika, salt, and black pepper. Mix until well combined.

          Prepare the Topping: After the potatoes are done, remove them from the oven and let them cool for a few minutes. Cut each potato open lengthwise, creating a pocket in the center.

            Fill the Potatoes: Carefully scoop out a small amount of the inside of each potato to create more space for the filling. Then, spoon the feta mixture into each potato, filling generously.

              Add Cherry Tomatoes: Top the filled potatoes with the halved cherry tomatoes. Drizzle a little more olive oil over the tomatoes and sprinkle a pinch of salt and pepper for extra flavor.

                Return to Oven: Place the stuffed potatoes back in the oven for another 15-20 minutes, or until the feta is golden and slightly bubbly, and the tomatoes are roasted.

                  Garnish and Serve: Once done, remove the potatoes from the oven. Garnish with freshly chopped parsley and serve with lemon wedges on the side for a zesty finish.
