2 cups rolled oats

1 teaspoon baking powder

½ teaspoon cinnamon

¼ teaspoon salt

2 cups almond milk (or any milk of choice)

¼ cup maple syrup (or honey)

2 large eggs

1 teaspoon vanilla extract

2 fresh peaches, diced (or 1 can of sliced peaches, drained)

½ cup chopped pecans (optional)

¼ cup brown sugar (for topping)

¼ teaspoon nutmeg (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with muffin liners for easy release.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, and salt. Stir until well combined.

      Prepare Wet Ingredients: In another bowl, whisk together the almond milk, maple syrup, eggs, and vanilla extract until fully blended.

        Combine Mixtures: Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined, then gently fold in the diced peaches and chopped pecans if using.

          Fill Muffin Tins: Evenly distribute the oatmeal mixture into the prepared muffin tin, filling each cup about ¾ full.

            Add Toppings: In a small bowl, mix together the brown sugar and nutmeg. Sprinkle this mixture evenly over the filled oatmeal cups.

              Bake: Bake in the preheated oven for 20-25 minutes or until the tops are golden and the oatmeal is set. A toothpick inserted should come out clean.

                Cool and Serve: Remove from the oven and allow to cool for about 10 minutes before removing them from the muffin tin. Serve warm or at room temperature, enjoy!
