Eggs play a crucial role in baking, especially in our Pumpkin Spice Bliss Muffins. They contribute to the overall moisture of the muffins while also acting as a binding agent. The proteins in the eggs coagulate during baking, which helps the muffins maintain their structure. For this recipe, you'll want to use large eggs at room temperature. This ensures they blend well with the other ingredients, creating a uniform batter that bakes into soft, fluffy muffins.

Ingredients

1 cup canned pumpkin puree

3/4 cup granulated sugar

1/4 cup brown sugar, packed

1/3 cup vegetable oil

2 large eggs

1 tsp vanilla extract

1 1/2 cups all-purpose flour

1 tsp baking soda

1/2 tsp baking powder

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp ground ginger

1/4 tsp ground cloves

1/2 tsp salt

1 cup semi-sweet chocolate chips

Optional: 1/2 cup chopped nuts (walnuts or pecans) for added crunch

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly grease with non-stick spray.

Mix Wet Ingredients: In a large mixing bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth and well combined.

Combine Dry Ingredients: In a separate bowl, sift together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, cloves, and salt. This will ensure even distribution of the leavening agents and spices.

Combine Mixtures: Gradually fold the dry ingredients into the wet ingredients using a spatula. Mix just until there are no flour streaks visible—be careful not to overmix to keep the muffins tender.

Add Chocolate Chips: Gently fold in the chocolate chips and nuts, if using, until evenly distributed throughout the batter.

Fill Muffin Cups: Divide the muffin batter evenly among the prepared muffin cups, filling each about 2/3 full to allow room for rising.

Bake Muffins: Place the muffin tin in the preheated oven and bake for about 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Cool Muffins: Once baked, remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Serve & Enjoy: These muffins are delicious warm or at room temperature. Enjoy them with a pat of butter, a drizzle of maple syrup, or simply on their own!
