Baked Spaghetti Squash Alfredo

1 medium spaghetti squash

2 tablespoons olive oil

Salt and pepper, to taste

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon nutmeg (freshly grated if possible)

2 cups cooked chicken breast, shredded (optional for protein)

1 cup steamed broccoli florets (optional for veggies)

¼ cup chopped parsley, for garnish

Extra Parmesan cheese, for serving

Instructions
 

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

    Prepare the Squash: Cut the spaghetti squash in half lengthwise and scoop out the seeds with a spoon. Drizzle the inside of each half with olive oil, then season generously with salt and pepper.

      Roast the Squash: Place the squash halves cut-side down on a baking sheet lined with parchment paper. Roast in the preheated oven for about 30-40 minutes, or until the strands easily pull apart with a fork.

        Make the Alfredo Sauce: While the squash is roasting, prepare the Alfredo sauce. In a medium saucepan over medium heat, combine the heavy cream, grated Parmesan cheese, garlic powder, onion powder, and nutmeg. Stir continuously until the cheese melts and the sauce is smooth and creamy. Season with salt and pepper to taste. If adding, stir in the shredded chicken and steamed broccoli to integrate with the sauce.

          Combine and Bake: Once the spaghetti squash is done, remove it from the oven. Use a fork to scrape out the strands into a large mixing bowl. Pour the Alfredo sauce over the squash strands and mix well until everything is coated evenly.

            Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish, spreading it evenly.

              Top and Final Bake: If desired, sprinkle extra Parmesan cheese on top of the mixed squash. Bake in the oven for an additional 20-25 minutes until bubbly and golden on top.
