Baked Zucchini Tomato Gratin

4 medium zucchinis, thinly sliced

3 large ripe tomatoes, thinly sliced

1 medium onion, finely chopped

3 cloves of garlic, minced

1 cup grated mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (preferably whole wheat)

4 tablespoons olive oil

1 teaspoon dried Italian herbs (oregano, thyme, basil)

Salt and pepper to taste

Fresh basil leaves for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Onion and Garlic: In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant. Remove from heat.

      Layer the Vegetables: In a greased baking dish, start layering the zucchini and tomato slices alternately. Begin with a layer of zucchini, followed by a layer of tomatoes. Sprinkle a portion of the sautéed onion and garlic mixture over the top. Season each layer with salt, pepper, and a sprinkle of the dried Italian herbs.

        Add Cheese: Once you have finished layering the zucchini and tomatoes, sprinkle the grated mozzarella and Parmesan cheeses evenly on top.

          Prepare Breadcrumb Mixture: In a small bowl, combine the breadcrumbs with the remaining 2 tablespoons of olive oil and mix well until the breadcrumbs are coated. Spread this mixture evenly over the cheese.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil to allow the breadcrumbs to brown and bake for an additional 15-20 minutes, or until the top is golden and bubbly.

              Garnish and Serve: Once baked, remove the dish from the oven and let it sit for about 5 minutes. Garnish with fresh basil leaves before serving for a delightful aroma and flavor.
