Balsamic Grilled Portobello Burgers

4 large portobello mushrooms, stems removed

1/3 cup balsamic vinegar

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

4 whole-grain burger buns

4 slices of fresh mozzarella cheese

1 cup arugula

1 large tomato, sliced

Optional: pesto sauce for spreading

Instructions
 

Marinate the Mushrooms: In a mixing bowl, whisk together the balsamic vinegar, olive oil, minced garlic, dried oregano, dried basil, salt, and pepper. Add the portobello mushrooms and turn to coat evenly. Cover and let marinate for at least 30 minutes (or up to 2 hours in the refrigerator for a deeper flavor).

    Preheat the Grill: Preheat your grill to medium-high heat. If using a grill pan, heat on the stove over medium heat.

      Grill the Mushrooms: Once the grill is hot, place the marinated portobello mushrooms on the grill, gill side down. Grill for about 5-7 minutes, then flip and grill the other side for an additional 5-7 minutes, or until they are tender and have grill marks. During the last minute of grilling, place a slice of fresh mozzarella on top of each mushroom to melt slightly.

        Prepare the Buns: While the mushrooms are grilling, lightly toast the whole-grain burger buns on the grill until golden brown.

          Assemble the Burgers: Spread a thin layer of pesto sauce (if using) on the bottom half of each toasted bun. Add a grilled portobello mushroom with melted mozzarella on top, followed by a few slices of tomato and a handful of arugula. Top with the other half of the bun.

            Serve: Serve the burgers immediately while hot, with additional balsamic vinegar drizzled over the top if desired. Enjoy with your favorite side dishes!
