Balsamic Vinaigrette Soup

2 cups ripe tomatoes, diced

1 medium red onion, finely chopped

1 cucumber, peeled and diced

1 red bell pepper, diced

2 cups vegetable broth

1 cup balsamic vinegar

1 tablespoon honey or maple syrup

2 cloves garlic, minced

1 teaspoon fresh basil, chopped

1 teaspoon fresh oregano, chopped

Salt and pepper to taste

Olive oil for drizzling

Prepare the vegetables: In a large mixing bowl, combine the diced tomatoes, red onion, cucumber, and red bell pepper. Mix well and set aside.

    Make the balsamic mixture: In a separate bowl, whisk together the balsamic vinegar, honey (or maple syrup), minced garlic, chopped basil, and chopped oregano. Season with salt and pepper to taste.

      Combine and blend: Pour the balsamic mixture over the diced vegetables and stir to coat. Let the mixture marinate for about 15-20 minutes to allow the flavors to meld.

        Add broth: After marination, transfer the vegetable mixture to a blender or food processor. Add the vegetable broth and blend until smooth, or leave it slightly chunky for more texture, depending on your preference.

          Adjust the viscosity: If you'd like a thinner consistency, add a little more vegetable broth until you reach your desired texture. Blend again for a few seconds.

            Chill: Transfer the soup to an airtight container and refrigerate for at least 1 hour, or until well chilled. This soup is best served cold.

              Serve: Pour the chilled Balsamic Bliss Soup into bowls. Drizzle lightly with olive oil and garnish with additional fresh herbs if desired.
