1 lb (450g) flank steak, sliced thinly against the grain

2 cups broccoli florets

1 red bell pepper, sliced into strips

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup soy sauce (low-sodium works best)

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon vegetable oil (plus extra for stir-frying)

1 tablespoon sesame oil

Salt and pepper to taste

Cooked rice or noodles, for serving

Sesame seeds and sliced green onions for garnish

Prep the Beef: In a medium bowl, combine the sliced flank steak with soy sauce, oyster sauce, cornstarch, and a pinch of salt and pepper. Mix well and let it marinate for about 15-20 minutes.

    Blanch the Broccoli: In a large pot, bring water to a boil and add the broccoli florets for about 2 minutes. Drain and immediately plunge them into ice water to stop cooking. This keeps the broccoli bright green and crisp.

      Stir-Fry Time: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated beef in a single layer. Let it sear for about 2-3 minutes without stirring, allowing it to develop a nice crust. Then, stir-fry until it’s just cooked through, about another minute. Remove the beef and set aside.
