Ingredients

1 lb ground beef (preferably grass-fed)

1/2 cup diced red bell pepper

1/2 cup diced onion

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon soy sauce or tamari (for gluten-free)

1 tablespoon hoisin sauce

1 tablespoon sesame oil

1 ripe mango, pureed

1 tablespoon lime juice

1 teaspoon honey or maple syrup (optional for added sweetness)

1/4 teaspoon crushed red pepper flakes (adjust to taste)

Salt and pepper, to taste

8-10 large lettuce leaves (such as butter or iceberg)

Fresh cilantro and sliced green onions, for garnish

Crushed peanuts or cashews, for topping (optional)

Instructions

Prepare the Mango Glaze: In a small saucepan, combine the pureed mango, lime juice, honey (if using), and crushed red pepper flakes. Heat over medium-low until warmed through and slightly thickened. Stir frequently. Remove from heat and set aside.

Cook the Beef Mixture: In a large skillet over medium heat, add the sesame oil. Once hot, add the diced onion and bell pepper. Sauté for about 3-4 minutes until they start to soften.

Add Garlic and Ginger: Stir in the minced garlic and grated ginger. Sauté for another minute until fragrant.

Brown the Beef: Increase the heat to medium-high and add the ground beef to the skillet. Cook, breaking it up with a spatula, until fully browned (about 5-7 minutes). Drain excess fat if necessary.

Season the Beef: Add the soy sauce and hoisin sauce to the pan, mixing well to evenly coat the beef and vegetables. Let it simmer for about 2-3 minutes, allowing the flavors to meld. Adjust salt and pepper to taste.

Assemble the Wraps: To serve, spoon the beef mixture into the center of a lettuce leaf. Drizzle with the warm mango glaze, then top with chopped cilantro, sliced green onions, and crushed nuts if desired.

Enjoy: Wrap the lettuce around the filling, and enjoy your fresh and flavorful Beef Lettuce Wraps with Mango Glaze!
