Ingredients

2 cups all-purpose flour

1/2 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, cold and cubed

1/2 cup almond flour

1/2 cup heavy cream

1 large egg

1 teaspoon pure almond extract

1/2 cup sliced almonds (for topping)

1/4 cup powdered sugar (for glaze, optional)

1-2 tablespoons milk (for glaze, optional)

Instructions

Preheat & Prepare: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.

Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, almond flour, granulated sugar, baking powder, and salt. Whisk together until well combined.

Cut in Butter: Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs with some pea-sized butter pieces remaining.

Combine Wet Ingredients: In a separate bowl, whisk together the heavy cream, egg, and almond extract until well blended.

Form Dough: Make a well in the center of the dry ingredients and pour in the wet mixture. Stir gently with a spatula or wooden spoon until just combined. Be careful not to overmix; the dough should be slightly sticky.

Shape Scones: Turn the dough out onto a lightly floured surface. Pat and shape the dough into a circle about 1-inch thick. Using a sharp knife, cut the circle into 8 equal wedges.

Transfer to Baking Sheet: Place the scones on the prepared baking sheet, leaving some space between each scone. Brush the tops lightly with extra cream and sprinkle with sliced almonds for a delightful crunch.

Bake: Bake in the preheated oven for 15-20 minutes, or until the scones are golden brown on top and a toothpick inserted comes out clean.

Cool: Allow the scones to cool on the baking sheet for about 5 minutes before transferring them to a wire rack.

Optional Glaze: If desired, whisk together powdered sugar and milk to create a glaze. Drizzle over scones once they are completely cool.

Serve & Enjoy: Enjoy these delightful almond scones warm or at room temperature, perfect for breakfast or an afternoon tea!
