Ingredients

4 medium zucchinis, sliced into half-moons

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

½ teaspoon red pepper flakes (optional for heat)

Salt and pepper to taste

2 tablespoons fresh lemon juice

¼ cup grated Parmesan cheese (optional)

Fresh basil leaves, for garnish

Instructions

Prep the Zucchini: Wash the zucchinis and slice them into half-moon shapes, about ½ inch thick.

Heat the Pan: In a large skillet, heat the olive oil over medium-high heat until hot but not smoking.

Sauté the Garlic: Add the minced garlic to the pan and sauté for about 30 seconds, stirring constantly, until fragrant. Be careful not to brown the garlic.

Add the Zucchini: Toss in the sliced zucchini and stir to coat in the garlic and olive oil.

Season: Add the dried oregano, dried thyme, and red pepper flakes if using. Season with salt and pepper. Cook, stirring occasionally, for about 5-7 minutes or until the zucchini is tender but still crisp.

Finish with Lemon: Once the zucchini is cooked to your liking, remove the skillet from heat. Drizzle with fresh lemon juice and stir to combine.

Add Cheese (optional): For a cheesy touch, sprinkle the grated Parmesan over the hot zucchini and toss gently until it melts.

Garnish and Serve: Transfer the sautéed zucchini to a serving dish, garnish with fresh basil leaves, and enjoy warm.
