200g Biscoff biscuits (crushed)

300ml heavy whipping cream

200g cream cheese, softened

100g Biscoff spread

75g powdered sugar

1 teaspoon vanilla extract

A pinch of salt

Extra Biscoff biscuits for topping (optional)

Chocolate shavings or cocoa powder for garnish (optional)

Prepare the Biscoff Base: In a medium bowl, combine the crushed Biscoff biscuits with 50g of melted butter. Mix until the crumbs are evenly coated. Press this mixture into the bottom of serving cups or a large serving dish to form a crust. Chill in the refrigerator while you prepare the mousse.

    Make the Mousse: In a large mixing bowl, beat the cream cheese with an electric mixer until smooth and creamy. Gradually add the Biscoff spread, powdered sugar, vanilla extract, and a pinch of salt, mixing until well combined and fluffy.

      Whip the Cream: In a separate bowl, whip the heavy cream until it forms stiff peaks. Be careful not to over-whip as it can turn grainy. Gently fold the whipped cream into the Biscoff mixture using a spatula, being careful to retain as much air as possible for a light and airy mousse.
