2 cups rolled oats

1 cup almond milk (or any milk of your choice)

1 cup fresh or frozen blueberries

1/4 cup honey or maple syrup

1/4 cup almond butter (or any nut butter)

1/4 cup brown sugar (lightly packed)

2 ripe bananas, mashed

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

Optional toppings: sliced almonds, coconut flakes, or extra blueberries

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking dish or line it with parchment paper for easy removal.

    Combine Wet Ingredients: In a large mixing bowl, combine the mashed bananas, almond milk, almond butter, honey (or maple syrup), and vanilla extract. Mix until smooth and well combined.

      Mix Dry Ingredients: In another bowl, whisk together the rolled oats, brown sugar, baking powder, cinnamon, and salt.

        Combine Mixtures: Pour the dry ingredients into the wet ingredients and stir until just combined. Gently fold in the blueberries, being careful not to overmix.

          Transfer to Baking Dish: Pour the mixture into the prepared baking dish, spreading it evenly. If desired, sprinkle some sliced almonds, coconut flakes, or extra blueberries on top.

            Bake: Place in the oven and bake for 25-30 minutes or until the edges are golden brown and a toothpick comes out clean from the center.

              Cool & Slice: Allow the squares to cool in the pan for about 10 minutes, then lift them out using the parchment paper (if used) and cut into squares.

                Serve & Enjoy: Serve warm or at room temperature. These squares can be stored in an airtight container in the refrigerator for up to a week.
