Ingredients

1 cup all-purpose flour

2 tablespoons granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk (or almond milk for a dairy-free option)

1 large egg

2 tablespoons melted butter (or coconut oil for a dairy-free option)

1 teaspoon vanilla extract

1 cup fresh blueberries (or frozen, but thawed)

Extra butter or oil for cooking

Maple syrup, for serving

Whipped cream or yogurt, for a topping (optional)

Instructions

Prepare Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

Combine Wet Ingredients: In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.

Mix Together: Pour the wet ingredients into the dry ingredients. Stir gently until just combined; avoid overmixing as this can lead to tough pancakes.

Fold in Blueberries: Gently fold in the fresh blueberries until evenly distributed throughout the batter.

Heat the Pan: Preheat a non-stick skillet or griddle over medium heat. Add a small amount of additional butter or oil to coat the surface.

Cook Pancakes: Pour about 1/4 cup of batter for each pancake onto the hot skillet. Cook until bubbles form on the surface and the edges look set (about 2-3 minutes). Flip and cook for another 1-2 minutes until golden brown.

Keep Warm: If cooking in batches, keep the pancakes warm in a low oven (around 200°F or 93°C) while you finish the rest of the batter.

Serve and Enjoy: Serve warm with maple syrup drizzled on top and a dollop of whipped cream or yogurt, if desired. Add extra blueberries for garnish.
