12 oz pasta (penne or fusilli work well)

2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tbsp olive oil (divided)

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh basil, chopped, plus extra for garnish

1 tsp balsamic vinegar

1 tsp dried oregano

½ cup mozzarella cheese, diced

Grated Parmesan cheese, for serving

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

    Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove from the skillet and let rest for a few minutes before slicing.

      Create the Bruschetta Topping: In the same skillet, add another tablespoon of olive oil. Add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the halved cherry tomatoes, chopped basil, balsamic vinegar, dried oregano, and a pinch of salt and pepper. Cook for about 3-4 minutes until the tomatoes start to soften.

        Combine Everything: Slice the chicken into strips and return it to the skillet with the bruschetta mixture. Add the cooked pasta to the skillet, along with the reserved pasta water. Toss everything together gently, allowing the pasta to soak up the flavors.

          Add Cheese and Serve: Stir in the diced mozzarella cheese until slightly melted. Serve immediately, garnished with extra basil and grated Parmesan cheese on top.
