2 cups cooked shredded chicken

1/2 cup buffalo sauce (adjust to taste)

1 cup shredded mozzarella cheese

1/2 cup cream cheese, softened

1/4 cup green onions, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

12 egg roll wrappers

Vegetable oil (for frying)

Ranch or blue cheese dressing (for dipping)

Instructions
 

Prepare the Filling: In a mixing bowl, combine the shredded chicken, buffalo sauce, mozzarella cheese, cream cheese, green onions, garlic powder, onion powder, and paprika. Mix well until all ingredients are evenly incorporated.

    Assemble the Egg Rolls: Lay an egg roll wrapper on a clean surface with a corner facing towards you. Place about 2 tablespoons of the buffalo chicken filling at the center of the wrapper.

      Roll the Egg Rolls: Fold the corner closest to you over the filling, tucking it in tightly. Then, fold the side corners towards the center. Finally, roll the egg roll away from you until it is completely rolled up. Seal the edges with a little water to ensure they don’t come apart during frying. Repeat with the remaining wrappers and filling.

        Heat the Oil: In a deep skillet or frying pan, heat about 1 inch of vegetable oil over medium heat until it reaches 350°F (175°C).

          Fry the Egg Rolls: Carefully place a few egg rolls in the hot oil, cooking them in batches to avoid overcrowding. Fry for about 3-4 minutes on each side or until they are golden brown and crispy.
