1 cup stone-ground grits

4 cups chicken broth

1 cup heavy cream

1 ½ cups sharp cheddar cheese, shredded

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon salt

¼ teaspoon black pepper

For the Shrimp Mixture:

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 small onion, diced

1 bell pepper (red or green), diced

3 cloves garlic, minced

1 tablespoon Cajun seasoning

1 teaspoon Worcestershire sauce

1 cup cherry tomatoes, halved

2 green onions, sliced (for garnish)

For Topping:

1 cup panko breadcrumbs

¼ cup melted butter

½ teaspoon paprika

¼ cup parsley, chopped (for garnish)

Instructions
 

Prepare the Grits:

    - In a medium saucepan, bring the chicken broth to a boil. Slowly whisk in the stone-ground grits and reduce the heat to low. Continue cooking for 20-25 minutes, stirring frequently, until thickened.

      - Once thick, stir in the heavy cream, cheddar cheese, garlic powder, onion powder, salt, and pepper until creamy and well combined. Set aside.

        Cook the Shrimp Mixture:

          - In a large skillet, heat olive oil over medium heat. Add the diced onion and bell pepper, sauté until softened (about 4-5 minutes).

            - Add minced garlic and Cajun seasoning, stirring for another minute until fragrant.

              - Add shrimp and cook for 3-4 minutes until pink. Stir in Worcestershire sauce and cherry tomatoes, cooking until the tomatoes start to soften (about 2 minutes). Remove from heat.

                Combine Grits and Shrimp:

                  - Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the cooked grits and shrimp mixture until well combined and evenly distributed.

                    Prepare the Casserole Dish:

                      - Lightly grease a 9x13 inch casserole dish with cooking spray or butter. Pour the grits and shrimp mixture into the dish, spreading it evenly.

                        Make the Topping:

                          - In a small bowl, combine the panko breadcrumbs, melted butter, and paprika. Mix until the breadcrumbs are well coated.
