1 ½ cups graham cracker crumbs

1/3 cup granulated sugar

1/2 cup unsalted butter, melted

2 (8 oz) packages cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

1 cup sour cream

1/2 cup caramel sauce (plus more for drizzling)

1/4 teaspoon salt

Optional: sea salt flakes for topping

Prepare the crust: Preheat your oven to 325°F (163°C). In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well combined and it resembles wet sand. Press the mixture firmly into the bottom of a 9x13-inch baking dish lined with parchment paper. Bake for 10 minutes, then remove from the oven and set aside to cool.

    Make the cheesecake layer: In a large mixing bowl, beat the softened cream cheese until smooth and creamy using an electric mixer on medium speed. Gradually add in the sugar and continue mixing until combined.

      Add eggs and vanilla: Mix in vanilla extract, then add the eggs one at a time, mixing on low speed until just blended. Be careful not to overmix.

        Incorporate sour cream: Fold in the sour cream, caramel sauce, and salt until fully combined and you have a smooth batter.

          Combine and bake: Pour the cheesecake mixture over the cooled crust, spreading it evenly across the top. Bake in the preheated oven for 30-35 minutes until the center is set but still slightly jiggly. Remove from the oven and allow to cool at room temperature for about 1 hour.

            Chill: After cooling, refrigerate the bars for at least 4 hours, or overnight for the best taste.

              Serve: Once chilled, lift the bars out of the baking dish using the parchment paper. Cut into squares, drizzle with additional caramel sauce, and sprinkle with sea salt flakes if desired.
