Caramelized Onion & Cheese Steak Sandwich

1 lb (450g) flank steak, thinly sliced

2 large onions, thinly sliced

2 tablespoons olive oil

1 tablespoon butter

1 tablespoon balsamic vinegar

1 teaspoon sugar (optional, for sweeter onions)

Salt and pepper, to taste

4 slices of provolone cheese (or cheese of your choice)

4 hoagie rolls or crusty bread of your choice

Fresh arugula or spinach, for garnish (optional)

Instructions
 

Caramelize the Onions:

    - In a large skillet, heat the olive oil and butter over medium heat. Once melted, add the sliced onions. Stir to coat and then reduce the heat to low. Cook the onions slowly for about 30-40 minutes, stirring occasionally. They should become soft, golden-brown, and caramelized.

      - If you prefer, add sugar for a sweeter flavor and splash of balsamic vinegar towards the end for a hint of tanginess. Season with salt and pepper to taste. Remove from heat and set aside.

        Cook the Steak:

          - In the same skillet (or a separate one for quicker prep), increase the heat to medium-high. Season the flank steak slices with salt and pepper.

            - Quickly sear the steak in the hot skillet for about 2-3 minutes on each side until browned and cooked to desired doneness. Combine with the caramelized onions in the skillet and mix well.

              Melt the Cheese:

                - Place the provolone cheese slices over the steak and onion mixture. Cover the skillet with a lid for about 1-2 minutes to allow the cheese to melt.

                  Assemble the Sandwich:
