1 cup assorted bell peppers (red, yellow, and green), sliced

1 cup zucchini, sliced into half-moons

1 cup cherry tomatoes, halved

1 cup baby carrots, sliced

1 cup broccoli florets

1 cup snap peas, trimmed

½ cup red onion, thinly sliced

3 cloves garlic, minced

2 tbsp soy sauce

1 tbsp sesame oil

1 tbsp olive oil

1 tsp ginger, freshly grated

Salt and pepper, to taste

Sesame seeds, for garnish

Fresh parsley or cilantro, for garnish (optional)

Optional protein: tofu, chicken, or shrimp (1 cup, cooked)

Instructions
 

Prep the Vegetables: Wash and slice all the vegetables as indicated in the ingredient list. If you're using optional protein like tofu or shrimp, ensure it’s cooked and ready to be added.

    Heat the Wok or Skillet: In a large wok or skillet, heat the olive oil over medium-high heat. Allow it to get hot but not smoking.

      Start with Aromatics: Add the minced garlic and grated ginger to the hot oil. Stir-fry for about 30 seconds until fragrant, but be careful not to burn them.

        Add Onions and Carrots: Toss in the sliced red onion and baby carrots. Stir-fry for about 2-3 minutes until they begin to soften.

          Incorporate the Rest of the Veggies: Add the bell peppers, zucchini, broccoli, and snap peas. Stir-fry for another 5 minutes until the vegetables are vibrant in color and tender-crisp.

            Add Flavor: Pour in the soy sauce and sesame oil. Toss everything together to ensure the vegetables are well coated in the sauce. If you're adding an optional protein, incorporate it now.

              Season to Taste: Taste the stir fry and season with salt and pepper to your liking. Mix well.
