½ teaspoon salt

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1 cup sharp cheddar cheese, shredded

½ cup sliced salami, chopped

½ cup diced cooked ham

¼ cup pepperoncini, chopped (or your preferred pickled veggie)

2 large eggs

¾ cup milk (whole or buttermilk for extra moisture)

¼ cup olive oil

1 tablespoon honey (optional)

Freshly cracked black pepper, to taste

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Line a muffin tin with paper liners or grease with cooking spray.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and dried Italian herbs until well combined.

      Add the Cheese and Meats: Stir in the shredded cheddar, chopped salami, diced ham, and chopped pepperoncini to the dry mixture, ensuring they’re evenly distributed.

        Mix Wet Ingredients: In another bowl, whisk together the eggs, milk, olive oil, and honey (if using) until smooth.

          Combine Mixtures: Pour the wet mixture into the dry ingredients. Stir gently until just combined. Be careful not to overmix; a few lumps are okay!
