Ingredients

4 slices of sourdough bread

1 cup sharp cheddar cheese, shredded

1 large apple (such as Granny Smith or Honeycrisp), thinly sliced

2 tablespoons unsalted butter, softened

1 teaspoon honey (optional)

¼ teaspoon ground cinnamon

Pinch of salt

Fresh arugula or spinach (optional, for added greens)

Instructions

Prepare the Ingredients: Begin by washing and thinly slicing the apple. Set aside. If using honey, mix it with a pinch of salt and ground cinnamon in a small bowl for added flavor.

Assemble the Sandwich: Lay out two slices of sourdough bread. Spread a layer of the honey mixture (if using) onto each slice. Add a generous handful of shredded cheddar cheese on one slice, followed by a layer of apple slices, and a handful of fresh greens if desired. Top it with another layer of cheddar and then place the second slice of bread on top.

Butter the Bread: Spread softened butter generously over the top slice of the assembled sandwich.

Grill the Sandwich: Heat a non-stick skillet or griddle over medium heat. Once hot, carefully place the sandwich in the skillet, buttered side down. Grill for about 3-4 minutes until golden brown and crispy.

Flip and Cook: Using a spatula, carefully flip the sandwich over. Butter the top slice which is now facing up, and continue grilling for an additional 3-4 minutes, until the cheese is melted and both sides are golden brown.

Serve: Remove the sandwich from the skillet and allow it to sit for a minute before slicing in half. Serve warm, with additional apple slices or a drizzle of honey on the side, if desired.
