Cheddar Chili Biscuit Sliders

For the Biscuits:

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1 teaspoon garlic powder

½ teaspoon cayenne pepper (optional, for extra heat)

½ cup cold unsalted butter, cubed

1 cup shredded sharp cheddar cheese

¾ cup whole milk

For the Chili:

1 pound ground beef or turkey

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) diced tomatoes (with juices)

1 can (8 oz) tomato sauce

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

1 tablespoon olive oil

2 tablespoons chopped fresh cilantro (for garnish, optional)

For Assembly:

Extra cheddar cheese slices (optional)

Fresh jalapeños, sliced (optional)

Leafy greens or lettuce

Instructions
 

Make the Biscuits:

    - Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

      - In a large mixing bowl, whisk together flour, baking powder, salt, garlic powder, and cayenne pepper.

        - Using a pastry cutter or your fingers, blend in the cold cubed butter until the mixture resembles coarse crumbs.

          - Stir in the shredded cheddar cheese. Gradually add the milk, mixing until just combined (do not overmix).

            - Turn out the dough onto a floured surface and gently knead it a few times. Pat it into a 1-inch thick rectangle and cut out biscuits using a biscuit cutter or a glass, ensuring to re-roll and cut any scraps.

              - Place the biscuits on the prepared baking sheet and bake for 12-15 minutes or until golden brown. Remove from the oven and let cool slightly.

                Prepare the Chili:

                  - While the biscuits are baking, heat olive oil in a large skillet over medium heat. Add ground meat and cook until browned, breaking it up with a spatula (about 5-7 minutes).

                    - Drain excess fat if necessary. Add the kidney beans, diced tomatoes, tomato sauce, chili powder, cumin, paprika, salt, and black pepper. Stir to combine.

                      - Reduce heat to low and let simmer for 15-20 minutes, stirring occasionally until it thickens.

                        Assemble the Sliders:

                          - Slice the baked biscuits in half horizontally. Spoon a generous amount of chili onto the bottom half of each biscuit.

                            - If desired, top the chili with a slice of cheddar cheese, fresh jalapeños, and leafy greens.

                              - Place the top half of the biscuit over the chili and gently press down. Optionally, you can serve them with additional toppings like chopped cilantro.

                                Serve:
