Ingredients

2 cups of cooked chicken, shredded (grilled or rotisserie)

10 oz tortilla chips (thick or restaurant-style preferred)

2 cups shredded Monterey Jack cheese

1 cup shredded cheddar cheese

1 can (15 oz) black beans, drained and rinsed

1 small red onion, finely chopped

1 jalapeño, sliced (optional for heat)

1 cup fresh pico de gallo

1 cup sour cream or Greek yogurt (for topping)

1/4 cup fresh cilantro, chopped (for garnish)

1 tsp cumin

1 tsp paprika

Salt and pepper to taste

Fresh lime wedges (for serving)

Instructions

Preheat Oven: Preheat your oven to 400°F (200°C).

Prepare Chicken: In a medium bowl, mix the shredded chicken with cumin, paprika, salt, and pepper. Ensure the chicken is well coated with the spices for maximum flavor.

Layer Tortilla Chips: On a large baking sheet, spread out the tortilla chips in an even layer. Ensure they are all flat and not stacked on top of each other for even baking.

Add the Chicken: Evenly distribute the seasoned shredded chicken over the tortilla chips.

Black Beans & Onions: Sprinkle the rinsed black beans and chopped red onion over the chicken. If you like it spicy, add the jalapeño slices as well.

Cheese It Up: Generously sprinkle the shredded Monterey Jack and cheddar cheese over the entire nacho mound, making sure to cover everything well for that cheesy goodness.

Bake: Place the baking sheet in the oven and bake for 10-15 minutes, or until the cheese is melted and bubbly. Keep an eye on it to ensure the chips don’t burn.

Toppings Galore: Once out of the oven, let the nachos cool slightly. Top them off with fresh pico de gallo and a dollop of sour cream or Greek yogurt.

Garnish & Serve: Finish with a sprinkle of chopped cilantro and serve with fresh lime wedges on the side for squeezing on top.

Dig In: Enjoy your cheesy baked chicken nachos straight from the baking sheet, or plate them for a more elegant presentation!
