Cheesy Baked Egg and Spinach Nests

Ingredients
  

4 large eggs

2 cups fresh spinach, chopped

1 cup shredded cheese (cheddar or a blend)

1/2 cup milk

1/4 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

4 whole wheat tortillas or large wraps

Olive oil spray

Fresh herbs for garnish (optional - parsley or chives)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Nests: Lightly grease a muffin tin with olive oil spray. Take the tortillas and cut them into circles large enough to cover the cups of the muffin tin. Gently press each tortilla circle into the bottom and sides of the muffin molds to create a nest shape.

      Sauté the Spinach: In a skillet over medium heat, add a splash of olive oil. Once hot, add the chopped spinach, garlic powder, onion powder, salt, and pepper. Sauté for about 2-3 minutes until the spinach wilts. Turn off the heat and let it cool slightly.

        Mix the Filling: In a mixing bowl, combine the wilted spinach, shredded cheese (reserve a little for topping), Parmesan cheese, and milk. Stir well to combine all ingredients evenly.

          Fill the Nests: Spoon the cheesy spinach mixture into each tortilla nest, filling them about halfway.

            Add the Eggs: Carefully crack an egg into the center of each filled tortilla nest. Sprinkle with remaining cheese, salt, and pepper on top of the eggs.

              Bake: Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the eggs are set and slightly golden around the edges.

                Cool & Serve: Once baked, remove the nests from the oven and let them cool for a few minutes before gently lifting them out of the muffin tin. Garnish with fresh herbs if desired.
