Cheesy Beef Noodle Casserole

1 pound ground beef

8 ounces wide egg noodles

1 medium onion, finely chopped

2 cloves garlic, minced

1 can (15 oz) tomato sauce

1 can (14.5 oz) diced tomatoes (drained)

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon black pepper

1 cup sour cream

2 cups shredded cheddar cheese (divided)

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

Salt to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Noodles: Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.

      Sauté the Beef: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cooking until softened and fragrant, about 2-3 minutes.

        Add the Ground Beef: Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.

          Combine Ingredients: Once the beef is browned, stir in the tomato sauce, drained diced tomatoes, oregano, basil, black pepper, and salt. Let it simmer for about 5 minutes to meld the flavors.

            Mix in the Noodles and Cheese: In a large mixing bowl, combine the cooked noodles, the beef mixture, and the sour cream. Stir in 1 ½ cups of the shredded cheddar and half of the grated Parmesan cheese until well blended.

              Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch casserole dish. Spread evenly.
