1 can (15 oz) chili (your choice: mild or spicy)

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup milk

1/4 cup sour cream

1 tsp chili powder

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

Cooking spray or muffin tin liners

Optional toppings: diced green onions, jalapeño slices, crushed tortilla chips

Instructions

Preheat Oven:

Preheat your oven to 350°F (175°C) and grease a standard muffin tin with cooking spray or line with muffin liners.

      Cook Pasta:

In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to the package instructions until al dente. Drain and set aside.

          Mix Ingredients:

In a large bowl, combine the cooked macaroni, kidney beans, chili, shredded cheddar, shredded mozzarella, milk, sour cream, chili powder, garlic powder, onion powder, salt, and pepper. Stir until everything is well incorporated.

              Fill Muffin Tins:

Spoon the chili mac mixture into each muffin cup, filling them to the top. Use a spatula to press the mixture down slightly.

                  Bake:

Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops are golden and the cheese is bubbly.

                      Cool and Serve:

Remove from the oven and let the muffin tin cool for about 5 minutes. Carefully remove the Cheesy Chili Mac Muffins from the tin and serve warm. Garnish with diced green onions, jalapeño slices, or crushed tortilla chips if desired.
