1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1/4 cup sour cream

1/4 cup chopped green onions (scallions)

2 large eggs

1/2 cup all-purpose flour

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

1/2 cup breadcrumbs (for coating)

Cooking spray or oil (for greasing)

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.

    Combine Ingredients: In a large mixing bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, sour cream, green onions, garlic powder, onion powder, salt, and pepper. Mix until well incorporated.

      Add Eggs and Flour: Add the eggs and flour to the potato mixture. Stir gently until the mixture is combined and forms a thick batter-like consistency.

        Shape the Puffs: Using your hands or a cookie scoop, form small balls (about 1.5 inches in diameter) with the potato mixture. Roll each ball in breadcrumbs until fully coated.

          Arrange on Baking Sheet: Place the coated potato puffs onto the prepared baking sheet, leaving space between each one for even cooking.

            Bake: Spray the tops of the puffs lightly with cooking spray or drizzle a bit of oil over them for extra crispiness. Bake in the preheated oven for 20-25 minutes, or until the puffs are golden brown and crispy.
