1.5 lbs (about 675g) Yukon Gold potatoes, washed and thinly sliced

2 cups (500ml) heavy cream

1 cup (100g) grated sharp cheddar cheese

1 cup (100g) grated Gruyère cheese

4 cloves garlic, minced

1 medium onion, finely chopped

1 tsp dried thyme

1 tsp paprika

Salt and pepper to taste

2 tbsp unsalted butter, for greasing the baking dish

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Prepare the baking dish: Grease a 9x13 inch (23x33 cm) baking dish with the unsalted butter. Make sure the bottom and sides are well coated.

      Sauté the onions and garlic: In a medium skillet over medium heat, add a splash of olive oil. Sauté the chopped onion until translucent, about 5 minutes. Add minced garlic and sauté for another minute until fragrant. Remove from heat.

        Combine cream and spices: In a large mixing bowl, whisk together the heavy cream, dried thyme, paprika, salt, and pepper. Adjust the seasoning according to your taste preferences.

          Layer the ingredients: Begin layering the sliced potatoes in the prepared baking dish. After the first layer, sprinkle a portion of the sautéed onions and garlic, followed by a sprinkle of both cheddar and Gruyère cheese. Repeat this layering until all ingredients are used, finishing with a layer of cheese on top.

            Pour cream mixture: Carefully pour the cream mixture over the layered potatoes, allowing it to soak into each layer. Ensure the cream nearly covers the potatoes.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 40 minutes. Remove the foil and bake for an additional 20 minutes until the top is golden brown and bubbly.
