2 lbs russet potatoes, peeled and cubed

1 cup sour cream

1 cup shredded cheddar cheese

1/2 cup shredded mozzarella cheese

1/2 cup green onions, finely chopped

1/4 cup unsalted butter, melted

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon salt

1 cup crushed cornflakes (for topping)

1/4 cup grated Parmesan cheese (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Potatoes: Place the cubed potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and set aside.

      Mix the Cheese Sauce: In a large mixing bowl, combine the sour cream, cheddar cheese, mozzarella cheese, melted butter, green onions, garlic powder, onion powder, black pepper, and salt. Mix well until thoroughly combined.

        Combine Potatoes: Fold the drained potatoes into the cheese mixture until they are evenly coated.

          Transfer to Baking Dish: Pour the cheesy potato mixture into a greased 9x13 inch baking dish, spreading it out evenly.

            Prepare the Topping: In a small bowl, mix the crushed cornflakes and grated Parmesan cheese. Sprinkle this mixture evenly over the potato mixture in the baking dish.

              Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and crispy.

                Garnish and Serve: Remove from the oven and let cool for a few minutes. Serve warm, garnished with additional green onions if desired.
