Cheesy Vegetable Quesadillas for the Family

Ingredients
  

4 large flour tortillas

2 cups shredded cheese (cheddar, mozzarella, or a blend)

1 cup bell peppers (any color), diced

1 cup zucchini, diced

1 cup corn kernels (fresh, frozen, or canned)

1 cup spinach, roughly chopped

1 small red onion, finely chopped

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

Fresh cilantro, for garnish (optional)

Sour cream or guacamole, for serving (optional)

Instructions
 

Sauté the Vegetables:

    - In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped red onion and sauté for about 2-3 minutes until it becomes translucent.

      - Add the diced bell peppers and zucchini, and cook for an additional 5 minutes until they are tender.

        - Stir in the corn and spinach, followed by the garlic powder, cumin, and season with salt and pepper to taste. Cook for another 2-3 minutes until the spinach wilts. Remove the skillet from heat.

          Prepare the Quesadillas:

            - In a separate skillet, add the remaining tablespoon of olive oil and heat over medium-low.

              - Place one tortilla in the skillet, then sprinkle about 1/2 cup of shredded cheese evenly over half of the tortilla.

                - Spoon a portion of the sautéed vegetable mixture over the cheese, then sprinkle another 1/4 cup of cheese on top of the vegetables. Fold the tortilla in half.

                  Cook the Quesadillas:

                    - Cook for 3-4 minutes on one side, or until the tortilla is golden brown and crispy. Carefully flip the quesadilla, and cook for another 3-4 minutes until the other side is golden and the cheese has melted.

                      - Transfer the quesadilla to a cutting board and let it sit for a minute before cutting it into wedges. Repeat the process with the remaining tortillas and filling.

                        Serve:

                          - Arrange the quesadilla wedges on a serving platter. Garnish with fresh cilantro and serve with sour cream or guacamole for dipping.
