Cheesy Zucchini Casserole

4 medium zucchinis, thinly sliced

1 cup of grated sharp cheddar cheese

1 cup of grated mozzarella cheese

1/2 cup of grated Parmesan cheese

1 medium onion, diced

2 cloves garlic, minced

3 large eggs

1/2 cup of milk

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1 cup of breadcrumbs (preferably whole wheat)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Prepare the zucchini: In a large bowl, toss the thinly sliced zucchinis with a pinch of salt and let them sit for about 10 minutes. This process will draw out excess moisture. After 10 minutes, pat the zucchinis dry with a paper towel.

      Sauté the aromatics: In a skillet, heat olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until soft and translucent. Stir in the minced garlic and cook for another minute until fragrant. Remove from heat.

        Combine wet ingredients: In another bowl, whisk together the eggs, milk, oregano, salt, and black pepper until well combined.

          Mix it all together: In a large mixing bowl, combine the sautéed onion and garlic mixture with the zucchini slices. Pour in the egg mixture and add half of each cheese (cheddar, mozzarella, and Parmesan). Mix everything thoroughly until the zucchini is evenly coated.

            Assemble the casserole: Transfer the zucchini mixture into a greased 9x13 inch casserole dish. Spread it out evenly.

              Add the topping: In a small bowl, combine the breadcrumbs with the remaining cheeses. Sprinkle this mixture evenly over the zucchini mixture, creating a cheesy and crunchy topping.

                Bake: Place the casserole in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and the casserole is set.

                  Garnish and serve: Once baked, remove the casserole from the oven and let it cool for a few minutes. Garnish with chopped fresh parsley before serving.
