2 large boneless, skinless chicken breasts

1 tablespoon olive oil

Salt and pepper, to taste

4 whole wheat tortillas

2 cups Romaine lettuce, chopped

1/2 cup cherry tomatoes, halved

1/4 cup grated Parmesan cheese

1 cup Caesar dressing (store-bought or homemade)

1/4 cup croutons (optional)

Fresh parsley, chopped, for garnish

Cook the Chicken: Preheat your grill or skillet over medium heat. Rub the chicken breasts with olive oil, and season generously with salt and pepper. Grill or pan-fry the chicken for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C). Let the chicken rest for 5 minutes, then slice it thinly.

    Prepare the Salad Mixture: In a large bowl, combine the chopped Romaine lettuce, halved cherry tomatoes, and grated Parmesan cheese. Drizzle with Caesar dressing and toss well to coat all the ingredients evenly.

      Assemble the Wraps: Take a tortilla and place a generous portion of the salad mixture in the center. Add a handful of the sliced grilled chicken on top. If you like a little crunch, sprinkle some croutons over the top.
