Chicken Caprese Panini

Ingredients
  

2 boneless, skinless chicken breasts

4 slices of fresh mozzarella cheese

2 ripe tomatoes, sliced

1 cup fresh basil leaves

2 tablespoons balsamic glaze

4 tablespoons pesto

4 ciabatta rolls or panini bread

2 tablespoons olive oil

Salt and pepper, to taste

Instructions
 

Prepare the Chicken: Season the chicken breasts with salt and pepper. Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the chicken for about 6-7 minutes on each side or until fully cooked and golden brown. Remove from heat and let it rest for a few minutes before slicing it into thin strips.

    Assemble the Panini: Cut the ciabatta rolls in half horizontally. Spread 1 tablespoon of pesto on the inside of each roll. Layer the sliced chicken, fresh mozzarella, tomato slices, and basil leaves on the bottom half of the rolls. Drizzle some balsamic glaze on top of the basil before placing the top halves of the rolls onto the sandwiches.

      Grill the Panini: Preheat a panini press or grill pan over medium heat. Brush the outside of the assembled sandwiches with the remaining olive oil. Place the sandwiches on the press or grill and cook for about 4-5 minutes, or until the bread is golden and crispy, and the cheese is melted.

        Serve: Remove the paninis from the press or grill, slice them in half if desired, and serve immediately with extra balsamic glaze drizzled on the plate or on the side for dipping.
