2 tablespoons olive oil

1 medium onion, thinly sliced

1 bell pepper (red or green), thinly sliced

3 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

1 cup provolone cheese, shredded (or cheese of your choice)

1/2 cup mushrooms, sliced (optional)

4 whole wheat or regular hoagie rolls, split (optional for serving)

Fresh parsley for garnish (optional)

Sauté the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the thinly sliced chicken, season with salt, pepper, and Italian herbs, and cook until browned and cooked through, about 5-7 minutes. Transfer to a plate and keep warm.

    Cook the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onions, bell pepper, and mushrooms (if using). Cook, stirring occasionally, until the vegetables are soft and slightly caramelized, about 5-6 minutes. Add the minced garlic and sauté for another minute until fragrant.
